| The During this two-year program, students will work in a commercial kitchen using modern food equipment to prepare large quantities of entrees, vegetables and desserts. Another important aspect of Food Preparation is developing skills in a restaurant. Experiences in short order service, food storage, food preparation, record keeping, customer relations and serving will take place in the “Corral” a fully equipped restaurant located on the Buckeye Hills campus. Referrals will be made through your Special needs staff and counselors. The Culinary Prep program uses the ProStart curriculum. ProStart is a school-to-career program created by the National Restaurant Association Education Foundation, that gives students real skills, real knowledge, real jobs! Based on input from restaurant and hospitality professionals nationwide, ProStart is designed to give high school juniors and seniors work experience combined with a practical curriculum that imparts real-world skills and food service concepts. The program introduces students to concepts not normally found in traditional programs-topics like customer relations, accounting, food cost controls, and marketing. Industry based and teacher tested materials make the ProStart curriculum relevant to a student's future-whether they are going on to postsecondary or out into the workforce.
